Picnic at Polo

Del Mar and horses go together like Bing Crosby and Danny Kaye. You may instantly think of the Del Mar Thoroughbred Club with the twice-annual thoroughbred meets, but Del Mar isn’t simply a one-horse town. San Diego Polo Club is just around the corner, with matches each Sunday through October 2nd, and two viewing experiences: the VIP social scene under the tents and umbrellas, plus tailgating along the field, which offers a unique and equally enjoyable way to watch the schuckers.

So we hopped into a Porsche 718 Boxster, stopped by Bixby and Ball on Cedros to pick up pillows, blankets and baskets and packed a picnic fit for a polo player. Enjoying an afternoon at San Diego Polo would be especially fun for the family or even as a romantic date for two. A picnic would not be polo-class without a Pimm’s Cup cocktail and effortless summer fare, notably Chicken Salad Sandwiches on Crusty French Bread, Mason Jar Salads, Assorted Cheeses and Fruit, and homemade Lemon Shortbread Bars for dessert.

Pimm’s Cup

Ingredients: Ice, 8 cucumber ribbons, 4 thin slices lemon, 4 ounces Pimm’s No. 1, 8 ounces ginger beer (Makes 2 cocktails)

Fill 2 tall glasses with ice, add a few cucumber ribbons and lemons slices. Pour 2 ounces of Pimm’s No. 1 into each glass, then top with ginger beer. Garnish with any remaining lemon and cucumber. Adapted from JoyTheBaker.com

Lemon Shortbread Bars

Ingredients for the Crust: 2 cups AP flour, 1 cup powdered sugar, 1 cup cold butter cut into small pieces, ½ tsp salt

Ingredients for the Filling: 4 eggs, 2 cups white sugar, 1/3 cup flour, ½ cup fresh lemon juice (3 large lemons)

Preheat oven to 350º and spray bottom of 9×13 pan with cooking spray. In bowl of food processor, mix flour, powdered sugar, butter and salt until it all comes together. Press dough firmly into bottom of pan, then poke with a fork. Bake for 18 minutes or until barely golden (press down crust with spatula for a firm crust). Meanwhile, in large bowl, whisk eggs until fluffy. Add sugar, constantly whisking. When combined, add flour and mix, then add lemon juice. Pour filling over crust when it comes out of the oven, then return to oven for 22 minutes or until the filling has set. Let cool completely, then sprinkle with powdered sugar and cut into bars.
