Pascal Lorange Brings Crudo to Carmel Valley

Making a big splash and not to be missed for foodies and locals – Pascal Lorange’s Crudo is the newcomer to Carmel Valley. The new concept highlights the passion of traditional cuisine from the Mediterranean coast with Japanese-inspired infusions. Crudo is inviting, elegant, simple yet makes a powerful statement from the moment you walk in. Presentation is passionate, informal, inspiring, a sophisticated simplicity. A must try is Crudo’s trio dipping sauce selection served with several of their dishes. Chef Lorange replaced the traditional Asian served ginger, wasabi and soy sauce with the elegant, yet refined homemade trio. A world renowned chef who has cooked in Michelin-star kitchens, Chef Lorange brings an incredible resume and background to Carmel Valley. He has travelled the globe but most recently launched the concept of Fig & Olive Restaurants, and managed the openings from LA to NY and DC for over a decade. He has cooked for numerous dignitaries, including Bill and Hillary Clinton as well as President Obama. Head to Crudo to see his latest creation and what all the buzz is about at the Village at Pacific Highlands Ranch.
