Favorite Farm to Table eatery, aside from MARKET of course! – Providence LA

One must-try dish at MARKET – We usually have some version of our miso-marinated black cod with steamed shrimp dumplings on the menu…always a favorite.

Favorite ingredient to work with – Corn! Not a trendy ingredient but when it’s in season, it shows up in at least 20 different soups. We even make sweet corn ice cream for dessert.

Favorite part of his kitchen/workspace – The little corner that is all mine. I have all my things there placed just where I want them.

Favorite thing about Del Mar – I love the beaches in North County. We like to hit the coast on bikes. I love to hike in Torrey Pines State Natural Reserve.

Favorite hidden neighborhood gem – I like to get tacos at this little spot called Kotija Jr. Taco Shop.

Favorite inspiration – Danny Meyer’s Setting the Table. He said it perfectly then and it’s all still relevant; it’s the way things should be done today.

Most memorable experience during 10 years at MARKET – The 10-year anniversary dinners. The team put out 10-course dinner and wine pairings for 100 guests two nights in a row. That’s 1,000 plates each night all timed up and coursed. It was wild, but we pulled it off. And no, I’ll never do that again.

Favorite seasonal produce he wishes was available all year round – Tomatoes, of course.

Guilty indulgence – Stuffing myself at midnight after I get home from a long night at MARKET.
